Faux French in Mexico - I know. Don't ask.

See this beautifully glazed and succulent-looking half duck?  It's probably the most disappointing thing I've ever eaten in my life.  In the sense that the presentation was so tremendous, I felt completely and utterly cheated.
In the Intercontinental Hotel of Guadalajara, Au Pied du Cochon, the famed and venerable French restaurant had set up shop for a weeklong celebration of French Cuisine.
But instead of having a little bit of France, I ended up with a soggy, rather rubbery piece of something on my plate that was oversauced.  Oh the travesty!

Serves me right for partaking in French cuisine in Mexico.  What was I thinking, anyway?  What a novice move...

careless cooks can mislead the quality of a whole nation.
but you CAN find good french techniques intertwined with mexican old tradition food.
